Tambi\u00e9n permiti\u00f3 leer qu\u00e9 se\u00f1ales pesaron este a\u00f1o en la definici\u00f3n del mapa gastron\u00f3mico nacional:<strong>\u00a0la entrada de nuevos territorios, la visibilidad de proyectos con discurso sostenible, el reconocimiento a la sala, la barra y el vino, y la confirmaci\u00f3n de que una estrella no funciona como t\u00edtulo vitalicio.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La ceremonia cerr\u00f3 con&nbsp;<strong>133 restaurantes recomendados, 63 Bib Gourmand, 11 Estrellas Verdes, 26 Estrellas Michelin y dos restaurantes con dos Estrellas Michelin<\/strong>. Pero el conteo m\u00e1s revelador estuvo en los movimientos:&nbsp;<strong>El Califa de Le\u00f3n perdi\u00f3 su estrella<\/strong>, mientras proyectos como&nbsp;<strong>Alcalde<\/strong>,&nbsp;<strong>Huniik<\/strong>,&nbsp;<strong>Ixi\u2019im<\/strong>,&nbsp;<strong>La Barra de Huniik<\/strong>,&nbsp;<strong>Xokol<\/strong>,&nbsp;<strong>Gaba<\/strong>&nbsp;y&nbsp;<strong>La Once Mil<\/strong>&nbsp;se incorporaron al grupo de restaurantes con estrella.&nbsp;<\/p>\n\n\n\n<h2 id=\"h-el-mapa-dejo-de-concentrarse-en-los-territorios-obvios\" class=\"wp-block-heading\">El mapa dej\u00f3 de concentrarse en los territorios obvios<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Una de las tendencias m\u00e1s claras fue la ampliaci\u00f3n geogr\u00e1fica. La ceremonia avanz\u00f3 por recomendaciones de&nbsp;<strong>Baja California<\/strong>,&nbsp;<strong>Baja California Sur<\/strong>,&nbsp;<strong>Ciudad de M\u00e9xico<\/strong>,&nbsp;<strong>Nuevo Le\u00f3n<\/strong>,&nbsp;<strong>Oaxaca<\/strong>,&nbsp;<strong>Quintana Roo<\/strong>,&nbsp;<strong>Jalisco<\/strong>,&nbsp;<strong>Puebla<\/strong>&nbsp;y&nbsp;<strong>Yucat\u00e1n<\/strong>. Esa secuencia no fue menor: mostr\u00f3 que Michelin est\u00e1 intentando ordenar la cocina mexicana desde varios focos, no solo desde los centros que ya ten\u00edan mayor exposici\u00f3n medi\u00e1tica.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/imagenes.eleconomista.com.mx\/files\/webp_768_768\/uploads\/2026\/05\/24\/6a13580e922d5.jpeg\" alt=\"image\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><figcaption class=\"wp-element-caption\">Ceremonia Michelin 2026GQM<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">La entrada de&nbsp;<strong>Alcalde<\/strong>, en Guadalajara, como nueva Estrella Michelin, reforz\u00f3 el papel de Jalisco dentro de esta edici\u00f3n. No fue \u00fanicamente el estado sede de la ceremonia; tambi\u00e9n apareci\u00f3 como parte activa del nuevo reparto de reconocimientos. En el mismo bloque,&nbsp;<strong>Xokol<\/strong>&nbsp;sum\u00f3 una estrella y tambi\u00e9n recibi\u00f3 Estrella Verde, lo que coloc\u00f3 a Jalisco dentro de dos conversaciones simult\u00e1neas: cocina reconocida por la gu\u00eda y pr\u00e1cticas asociadas a sostenibilidad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yucat\u00e1n tambi\u00e9n tuvo una noche especialmente visible.&nbsp;<strong>Huniik<\/strong>&nbsp;y&nbsp;<strong>La Barra de Huniik<\/strong>&nbsp;entraron al grupo de nuevas estrellas;&nbsp;<strong>Huniik<\/strong>&nbsp;recibi\u00f3 adem\u00e1s el&nbsp;<strong>Michelin Service Award<\/strong>, entregado a&nbsp;<strong>Rodrigo Caltenco N\u00fa\u00f1ez<\/strong>. A ello se sum\u00f3 el&nbsp;<strong>Young Chef Award<\/strong>&nbsp;para&nbsp;<strong>X\u00f3chitl Vald\u00e9s<\/strong>, de&nbsp;<strong>Pancho Ma\u00edz<\/strong>, en M\u00e9rida. La presencia yucateca no se explic\u00f3 solo desde la cocina, sino desde el servicio, la barra y el talento joven.&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Las&nbsp;<strong>Estrellas Verdes<\/strong>&nbsp;fueron otro indicador importante. Eso sugiere una lectura m\u00e1s compleja de la excelencia: no basta con una cocina t\u00e9cnicamente s\u00f3lida si el restaurante no dialoga con su entorno, sus productos y su forma de operar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En esta edici\u00f3n,&nbsp;<strong>la sostenibilidad no funcion\u00f3 como una categor\u00eda aislada. Se cruz\u00f3 con el reconocimiento principal y mostr\u00f3 que Michelin&nbsp;<\/strong>est\u00e1 observando con m\u00e1s atenci\u00f3n a los proyectos que construyen una propuesta culinaria desde el territorio y no solo desde el plato terminado.&nbsp;<\/p>\n\n\n\n<h2 id=\"h-la-experiencia-completa-peso-mas-que-el-protagonismo-de-la-cocina\" class=\"wp-block-heading\">La experiencia completa pes\u00f3 m\u00e1s que el protagonismo de la cocina<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Los premios especiales de la noche tambi\u00e9n dieron una pista sobre las prioridades de la gu\u00eda.
